About the Recipe

This is an easy, wholesome, slightly spicy option for breakfast, lunch or dinner.

Ingredients
  • 1/2 medium onion medium, chopped

  • 2 garlic cloves, smashed or chopped

  • 1 tbsp extra virgin olive oil

  • 1/2 lb cherry tomatoes

  • 4 tbsp Cali Kitchen Chipotle and Tomato Confit Sauce

  • 4 eggs

  • 4 tbsp feta or goat cheese (optional)

  • Parsley and/or cilantro for garnish


  • Sea salt

  • Black pepper

Preparation

Step 1


Preheat a pan over medium heat for five minutes. Swirl in the olive oil and then sauté the chopped onions and garlic cloves until the onions become translucent (about 5 minutes). Add the cherry tomatoes, sea salt and pepper to taste, and cook for five more minutes. Stir in the Chipotle and Tomato Confit Sauce, reduce the heat to low.


Step 2


Once the sauce is simmering gently, use a spoon to make small holes for the eggs, then crack one into each spot. Cook for 5 minutes or until the eggs have the yolk texture that you prefer. Turn off the heat and garnish with fresh herbs. Feel free to add feta or goat cheese.
