About the Recipe
This is our favorite way to make sweet potatoes, bringing out their natural sweet and nutty undertones with the flavors of roasted garlic, tahini and lemon. The pepitas add a great crunchy texture. Crumble on some feta or cotija cheese if you want to be extra decadent!
Ingredients
2.5 pounds (1kg) sweet potatoes, peeled and cut into 1 inch cubes
4 tbsp extra virgin olive oil
4 oz. Cali Kitchen Tahini Roasted Garlic Sauce
1/2 cup roasted and salted pepitas, or pumpkin seeds
1-2 oz. crumbled feta or cotija cheese (optional)
Black pepper
Sea salt
Preparation
Step 1
Preheat the oven to 375ºF (190ºC). Combine the sweet potatoes with olive oil and black pepper and sea salt to taste. Place the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
Step 2
Roast the sweet potatoes until a fork can pierce through easily, about 25-35 minutes. Rotate the pan halfway through so that all of the pieces are cooked evenly.
Step 3
Remove the sweet potatoes and place them on a serving plate. Drizzle with the Tahini Roasted Garlic Sauce and top with pepitas and feta or cotija cheese (optional).
